Nut-Crusted Black Cod
Sweet, salty, nutty and flaky - this is one of my favourite ways to enjoy a flaky white fish.
Ingredients:
Black cod filet (or any flaky fish of your choice)
1/2 cup mixed nuts
1 tsp chilli flakes
2 tbsp honey mustard (or grainy mustard of your choice)
Olive oil
Directions:
Grind up mixed, toasted nuts
Combine nuts and chilli flakes, place in shallow bowl or tray
Coat fish in mustard
Dip fish into nut mixture, making sure there's a thick coating
Heat pan on high. Add olive oil, reduce to medium.
Once oil is hot, carefully add fish. Nut side down. Reduce to medium-low.
Flip fish once nuts are toasted. You will know because the fish/nuts coating won't stick to the pan when you attempt to flip it. About 3 minutes*.
Finish with the skin side down until crispy. About 2 minutes*.
