Avocado toast, etc.

Australian style cafes in New York are currently competing with 99 cent pizza shops for most real estate in the city. Well, no - but it sort of feels that way. 

Over the past five years, cafes have been fighting to serve the brightest pink beet lattes, the most vibrant blue smoothie bowls and the most Insta-worthy open faced vegetarian breakfast sandwiches they like to call: avocado toast. 

One of the first to this game, and still one of my all-time favourites is from Two Hands in Soho. Built on the thickest, square slice of crusty multigrain bread you can picture, with an equally thick helping of chunky, mashed avocado and the option to add eggs of your choice; there’s a reason they made this dish famous. But the eggs are not really a choice. You must, and I reiterate MUST go with the scrambled. Seems like a strange choice, considering Instagram has taught us that all ago toasts need an oozing egg yolk and diners have taught us that all scrambled eggs are dry. Think again, these carefully folded eggs will change your view on scrambled eggs for ever.

Same goes for a newer player to the game: Good Thanks Cafe. Here, the eggs are slowly folded almost resembling a rose. And while these are the most Instagrammable scrambled eggs you’ve ever seen, they’re not shaped like a rose for that purpose. This is simple a result of the slow folding process. Another result: they taste like a heavenly cloud. Even the simply sliced avocado on the side is seasoned to perfection.

Other classic players here are Bluestone Lane, Little Collins, Gotan and arguably the OG of New York City avocado toasts: Cafe Gitane. All great options to get your properly seasoned avo toast fix. And at these, it’s okay to go with that runny egg on top. I won’t judge you …as long as you went with the scrambled at Two Hands and Good Thanks.

So say goodbye to soggy bread and under seasoned avocado …none of these options will ever steer you wrong.
